Strawberry Half Moon Pies

Pie Crust:

2 c. flour

2/3 c. crisco

pinch of salt

1/2 tsp. baking powder

Crumble these ingredients together. Add approximately 1/2 cup of water to the crumbled mixture to form into a dough ball. Roll out dough. Cut dough with a round circle cutter. I've already used a small bowl to give me the desired shape. Place a small amount of filling inside center of circle. Sprinkle water around edge of circled pie crust. Fold over half crust to the other half and pinch shut. You can use the tip of a fork to crinkle edges to secure the filling inside. Cut small holes on top of moon pie. Set on a cookie sheet. Smear each moon pie with egg yolk on top and sprinkle sugar on top. Bake at 375 for approximately 20 minutes or until golden brown.

 

Filling:

Cut up strawberries mixed with a jar of Mrs. Miller's Bumbleberry Jam or any desired flavor to get a nice filling consistency.
